It doesn’t have a name yet because I made it up…
For 4 People
4 Chicken Breasts
1 Large Onion (or 2 medium onions)
2 Garlic Cloves (or a little garlic puree)
A Little Oil
1 Tin Evaporated Milk
1 pack Spinach (or equivalent)
1 Tin Beans (Chickpeas, Borloti Beans, Haricot Beans…) or equivalent
Juice of 1/2 Lemon
Spices - 1 tspn each of Coriander, Cumin, Turmeric, Chilli Powder (to taste), Thyme & 1 tspn Garam Masala for good measure… Or make up your own spice mix. Experimentation is the spice of spice, after all.
Salt
Chop up onion and garlic and shallow fry in the oil in a large saucepan.
Dice the chicken breasts.
When the onions begin to look glassy, pour in the lemon juice, stir, then add the spices (one at a time or all together). Stir until the onion is covered with the spices, then add the chicken.
When the chicken has started to cook pour in the evaporated milk.
When the mixture begins to simmer, add the spinach a handful at a time, stirring constantly, and allowing it to reduce.
Add the beans & a few generous shakes of salt
Simmer for 20 minutes (make some rice quick!)
Serve & Enjoy
You might fancy adding some crunchy peanut butter at the end, and desiccated coconut also works very well
